Ice Cider is always an interesting acquaintance. Hope this doesn't let me down either. My fourth of this rare style, by the way. This cider is limpid, deep rosé orange. Looks beautiful. The cider has no carbonation and, hence, no head emerges on the top. The scent is powerful, offering intensive apple mash, a good load of apple peel and apple jam. The flavor profile is extraordinarily sweet with bags of apple mash and apple jam. The taste is just like that of a dessert wine. A moderate sour element raises its head in the end, otherwise a similar sweet slam prevails throughout the journey. The mouthfeel is thick, full, sappy and desserty. A real slow sipper. Natural, autumnal. A 5 cl portion as a dessert or a coffee accompaniment is well enough.

Now a glass of real cider. It's the synonym for an authentic cider. The beauty of the real cider is that only natural ingredients are allowed. This cider contains Finnish apples and wild yeasts. That's it. Sounds awesome, like a cider version of a Lambic. The appearance shows a semicloudy, deep yellow to pale gold tint. The carbonation is minimal. No wonder. Basically, no head emerges on the top. Flat still, if not immediately, very quickly it is. Medium-sour apple mash with bags of apple peel is what I enjoy in the air. Nothing extra. Attractively natural, like fruits picked straight from the garden. The apple juice is sour. Astonishingly sour for a cider. Hence, the name. But: the sourness is not like that of a Sour Ale which contains lactic acid but rather because of the sourness of the apples themselves. Apples contain malic acid. And that tastes here big time. Loads of apple, bags of apple peel. Natural as natural can be. The wild yeasts have produced a beautiful set of funky farmhousey nuances, such as horse stable with an earthy element. Plus hair-thin leather. But not vinous flavors though. The taste is somewhat light. Light minus maybe. That's typical at wild yeast fermented ciders. The end is identical to upfront. The mouthfeel is light, juicy, pulpy and zippy. It's moderately funky and extremely natural. Summery. Nordic. Truly acidic with a bit of tartness and a strongly puckering side. Probably erodes my enamel. Enjoyable! We have a similar cider developing in our cold cellar. 😊
