Tonight's Ambrée is foggy copper in color. The carbonation behaves obediently and releases a dense creamy head that exceeds one finger. The foamy lid descends to an attractive lace ring and neat haze on the surface.
Caramel and matcha find my nose first. And quite a generous punch of vanilla. Interesting. A bit of brown sugar and raisin follow in their footsteps.
When the fragrance gives "Pastry Ambrée" notes (I came up with that expression myself...), the taste profile falls short of any pastry-like sensation. Or not as much as the scent suggests. Brown sugar, a drop of syrup, vanilla, green tea powder, cookie and dry grass can be listed as the key variables of the palate.
The body takes me with surprise: it's bigger than I anticipate. Medium-full, actually. That's generous at 5 %. The tail is thinner and a tad bitter, I don't observe those pastry-like flavors anymore.
The mouthfeel is medium-full, moderately husky, somewhat dry and simultaneously a bit drying but also lip-glueing.
A difficult beerstyle with an even more difficult adjunct, green tea. Still, I would call this successful in its own right. Fairly good feng shui. I'll add +0.3 stars for innovativeness.
