First try at heavy seas brewing from baltimofe with their uncharted waters: Siren Noire 2016. An imperial stout brewed with chocolate and aged in bourbon barrels for three weeks. Triple amount of chocolate nibs and added vanilla beans. Expected this to be chocolate overload smooth and creamy with a twist of dry bourbon. Well. Aroma has all the ingredients of an bourbon barrel stout. Chocolate, some coffee, roasted malts and a small hint of wood and bourbon. The mouthfeel of the beer, a little bit chilled in the fridge is pretty sharp. Not really much sweetness in the beginning as I would've expected, especially when mentioned the chocolate. Instead there's actually quite a lot of coffee and dry roasted malts. Inbetween I can taste the raw cacao beans and some vanilla, before the taste descends into somewhat boozy, bourbon and woody finish with also quite much bitterness still along in the finish. Very much more dry, full of coffee and not sweet at all. Full bodied, but not that heavy as I would've expected. Letting it stand and get warmer for awhile, I can definetly find the chocolate mentioned. The taste turns into much smoother, creamier and also a little bit sweeter with dark chocolate surfacing, but keeping the overall palate well balanced between the sweetness and the dryness. This might be the first stout I have noticed such a difference on letting it get warmer from the opening. I usually chill my imperials just a little bit to see the taste develop and deepen, but didn't expect such a difference. Nevertheless, a very solid imperial stout, the short barrel time and the side role of the bourbon fits right into this and nothing bad to say. 4/5
