BA Flanders Red with Strawberries
Inspired by Flanders Reds of old, Doom Witch is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Scottish whisky barrels (Longmorn & North British). The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character.
This blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery.
Drink young or age, this will get weirder.

This is my third variation from Holy Goat Brewing and they are my new leader in sours. The sour red ale with strawberry and tayberries delivers the perfect sweet fruit flavours and once again they get the perfect balance of tang.

Couldn't resist getting thing brew again, it really is one of their best Flanders style sours brews to date. Blended new batch with old batch whiskey barrel, creating a complex fruity sour with Flanders red style salt and balsamic vinegar.
It's very fruity on the nose, bursting with strawberry and tayberries and an enticing sweetness not just from the fruit but also from the warming whiskey influence.
Not as sour as last time, not cutting as much this time. Still makes my tongue feel like it does have a slice of two! It has decent mouthfeel for a sour, other than the obvious, i feels like a pale ale I terms of chewiness. It's very deep with flavour that requires studying this early into drinking, which I won't do again. I'm just gonna enjoy this one.

A Flander Red style sour beer by Holy Goat is a wonderful thing, a bit different from an actual Flanders but that's to it's benefit as they often feature fruit and the same is true with this Doom Witch. Not only is this a blend of whiskey barrel aged and normal vat, it's also fermented on tayberries then strawberries! All this artisan process should translate into a complex flavour profile.
It's is very murky and literally mud-brown coloured with only a hint of red to be seen from those fruits. Not as pungent on the nose as I was expecting, but it's certainly rich with a whole host of aromas such as sherry from the mix of whiskey and fruit, balsamic vinegar, salt, spikey raspberry and tangy strawberry shine through too.
Very very sharp in the mouth, more so than it is sour, if you understand that description. That's to say it stabs your tongue but doesn't make your mouth pucker like a sour sour. The balsamic side of this Flanders style brew is alot stronger than previous Flanders style brews of theirs, rivaling and surpassing the Pastore collab in this regard. Goat and Ram with Pastore has pinot noir skins and is gorgeous where as this Doom Witch is not a million miles away with its red berry profile. Though not grape, it's instead differentiated by the Scottish specific berry Tayberry. It's blends with strawberry very well, a harmonious marriage of sweet red fruit that counters the piercing sour, salt and vinegar. The whiskey barrel aging doesn't add or take away too much, providing only a gentle heat and enhancing the fruits sweetness.
Comparison this to a golden sour is unfair and comparing this to a X brewery sour is frankly laughable. Closest comparison to be made is understandably a real Flanders Red and for me, this is nicer than the one or two I've tried. It really it's something special and different.
It's not for everyone, probably not for many in fact. Due to its sharpness and pronounced salt that builds and lingers in the finish like sea water, the only cure of which is going in for another sip! My only slight criticism would be the salt is slightly too much, I am going to mark it down a little consequently. From 4.4 to 4.2.
