Framboise inspired wild ale with tayberries and strawberries
Inspired by the Belgian framboise, our version is primary fermented with a Brettanomyces blend which produces intense juicy stone and tropical fruit flavours. In this, our 2023 iteration of Spectral Lore, we refermented the base beer on 250g/l of Tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through our home of Dundee where these berries were first bred.
Whilst a framboise style is traditionally brewed with raspberries, we decided to use tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma.

I had this brew at the end of last year and now I have a 2023 current version, which includes strawberries and a slightly lower ABV.
Tayberries of Scotland are again featured in this brew like a couple other by the kings in the north of sour brews Holy Goat.
Pretty hazy and a nice rosey pink / ruby colour. Raspberry jumps out on the nose as tayberries are a cross breed of raspberry and blackberry. Strawberry's influence is soft on the nose aswell as the expect sour stone fruit notes of the base.
It's not very sour to the point of puckering or reeling back but it is mouthwateringly sour with a clean quick finish. Blackberry flavour is the most subtle with raspberry and strawberry leading the brew. Altogether soft a pleasant like a posh fruit soda pop! Sweet and easy drinking within the context of a sour and of course using only proper adjunct locally sourced, no concentrates here let's alone artificial grimness. A true expression of holy goat quality.
