Baltic porter is a dark, strong robust beer, usually but not always made with lager yeast. Our version uses ale yeast, but it’s been fermented in lower than usual temperatures, losing much of the fruity esters. Cleaner fermentation profile allow the malts and herbs to shine trough.
A tiny amount of peat smoked malt creates a subtle smoky aroma, resembling some of the best Scottish Islay whiskeys. Meanwhile it’s herbal side comes from the dried meadowsweet, sweetgale, bogbean we used in the boiling process.
A thin peat smokiness and herbs usually found in swamps has led us to creating very local, bog inspired Baltic porter.
