Alright, now that I'm here, let me check out their bottle collection. And indeed, a couple of Traditional Lambics are there. Iris is my choice. Vintage 2022. It may be a risk since this is fairly young and, hence, not developed adequately. Well, I'll take the risk.
Lucid copper is the hue. Carbonation behaves obediently, there's a bit of boldness but, on the other hand, also some oppression. Anyway, the head is frogspawny, off-white, even creamy. Fairly moderate. Retention seems to last long. Substantially long. And it's still there...
Sour apple dominates the scent. A good load of green grapes that are fresh, even raw, so that they simply crack when bitten. White wine is definitely there but the wild yeast dances timidly. A suggestion of green gooseberry can also be identified among the components.
The palate is... well, I'm prepared for this... YOUNG. Not really edgy but absolutely not round either. Dry white wine, sour apple, bags of sour apple actually... Wild yeast is easily recognizable but overwhelming. A bit of green gooseberry, raw for sure. Not particularly layered, definitely not soft and not aged. Like I said, it's young. It doesn't mean sharp and husky but just young. There's certainly room for development.
The body clocks medium-full. This is amazing for a Lambic of 6.5 %. Impressive! The finish is somewhat flatter than upfront, sour apple and dry white wine in abundance. No major difference to upfront. The aftertaste doesn't want the world to see it 'cause it doesn't think that they'd understand, when everything's made to be broken, it just wants you to know who it is.
The mouthfeel is mellow, tart, puckering, somewhat acidic and vinous. It's funky, Belgiany and young. Not really sharp but undeveloped. Needs cellaring. My share is already down the throat. 😅
