A beer with freshly harvested Mosaic? With the new experimental YCH 301 Trial technique, which involves extremely fast freezing of the freshly harvested hops while preserving all their characteristics without the need to dry them, we were able for the first time to use Wet Hop Mosaic and bring back to Perfect Frozen Mosaic.
