
Saint Amatus, also called St. Aimé, was a Benedictine monk. He took the defense of the lesser man who was exploited by the Merovingian king Thierry III. In Belgium, Oostvleteren is the only parish to patron St Amatus as saint. Struise started brewing at Deca in Vleteren early 2006, we ankered ourselves by starting the development of our own micro brewery in Oostvleteren during 2009. With this adventure being on the rails, we thought the making of Saint Amatus 12 was as evident as can be. The terrific artwork was brought by our narcissistic artist Carlo Grootaert.
Saint Amatus has aged on Woodford Reserve barrels from Labrot & Graham, Kentucky USA. Some batches were instead aged on Pappy Van Winkle whiskey barrels.

Oostvleteren 12... sounds like Westvleteren 12 but with the opposite direction. And different breweries. I guess, Oostvleteren and Westvleteren have nothing to do with each other. Or do they?
Anyway, this is a Quadrupel – one of my favorite beerstyles. I love the deepness of this genre. Let's see how this particular beer fares within its peers.
Vintage 2021.
The appearance is nocturnal: very deep dark brown. Looks transparent when illuminated. Modestly carbonated. A suppressed lacing with a surprisingly pale beige hue adorns the top for quite a long time.
The fragrance is powerful, I can sense it immediately. Bourbon and the associated barrel notes win this contest. Dried plum, blackcurrant, a bit of date, cane sugar and a twist of molasses occupy all the remaining positions. Or almost all. There's one more nuance, an interesting twist of spice, and that is caraway. Attractive! 🖤🖤
The taste is different. Much less round. And young. Bourbon and the barrel sphere leave a soaked woody sensation in the mouth. Raw. Purple plum, also dried, dark malt, licorice, molasses, caraway. And blackcurrant. Basically, a nice set of flavors can be detected but the overall impression is a tad unfinished.
The body is full. The tail gives Bourbon, licorice and strong barrel notes.
The sensation is full, relatively deep, rich, smooth, slightly spiced and lip-glueing. It's warming, woody and definitely barrel aged. On the negative side, the mouthfeel is raw and slightly edgy. As if four years in a bottle weren't enough?
When compared with the peers, this fails to reach the top despite the rating.
