It’s safe to say that since it re-entered our lives on the back of our recent collaboration beer with Funky Fluid, we’re finding that we’ve got a huge soft spot here for HBC 630 here at Polly’s. Part of the Hop Breeding Company’s experimental arm, we’ve absolutely fallen in love with the flavour compounds this varietal imparts into our beers. With sweet candy-like flavours abound, we pick up a whole host of cherries, raspberries, as well as (no seriously) peaches and cream to boot. We don’t want to shoot too far off the sweet and cloying end of things though, so Heeko is backed up with old-school favourite of the brewery Simcoe to bring a piney citrus zest to proceedings.

Fruity - quite fruity and bitter at the same time. Really soft, smooth and drinkable. Great tasting beer in the 5% category

Arômes de bonbons sucrés, cerises, framboises, ainsi que pêches et de la crème. Heeko est complétée par du Simcoe, le houblon favori de la brasserie, qui apporte un zeste d'agrumes.

Deep colour for a pale ale here, hazy and amber. Very hoppy on the nose with sweetness and tropical and stone fruit aromas.
Simcoe hops are joined by a new pollination by HBC numbered 630 which is supposed to bring cherry candy to the table which would explain the sweet nose. This is a beautiful pale, it reminds me of Deya's Steady Rolling Man but then the HBC 630 does it's thing and sweetens the brew. (Also I don't think steady fella is Simcoe!).
I'm getting light lemon zest, a suggestion of pineapple, a punch of peach and misc candy sweet hoppiness. I'd like to say yes it's cherry but not getting that clearly and that's a flavour I associate with a red sour beer.
It's less hoppy than some of the best pales like aforementioned Deya's and even other Polly's, but it is different. It's light, soft, drinkable, thin in the mouth with big flavour and a clean medium fast finish.
I'm imagining some different blends of hops with this 630 cross pollination. Maybe Loral and Citra. Or 630 with Strata and Vista, that would be rad.
