Primary fermented with a blend of Brettanomyces strains, and brewed with local Scottish barley, wheat and oats. Honeybucket was blended from 3 different batches of beer which had an average age of around 4 months, to which we added fresh elderflower blossom foraged from the local vicinity of the brewery.
In this year’s version (2022) of Honeybucket we refermented with raw buckwheat honey supplied by our friends at the Edinburgh Honey Co. The dark rich buckwheat honey lends subtle molasses and earthy notes which combine with bright elderflower aromatics and character from the mixed culture.
Drink young, or age. This will get weirder.

Another yeasty beer
Can’t taste the honey nor is the elderflower very prominent
It’s just the yeast I can taste
There is a sweet aftertaste
But can’t pick out any of the flavours
It’s okay but just not for me

Very pale amber and hazy brew, lovely when pouring but a lack of visible carbonation in the glass. It has the golden sour aroma of "Goats for Ukraine" but with a sweetness from honey and a light floral freshness from the elderflower.
The first sip surprises as initially there is no sour or tartness instead it slams at the end! Sweet honey layers your mouth and elderflower elevates it, a beautiful combo, then the finish is a sharp sour hit that merges with the preceding flavour. Together these elements outshine the simple golden sour with no fruit or no honey like this brew has. Goats for Ukraine has buckwheat and yeast, Honeybucket has light but bright flavour born of quality ingredients.
Still it is a simple sour compared to most Holy Goats, end of the day there is no fruit here. But it's a different approach to a summer themed sour, not a citrus attack but a summer field vibe. It conjures images of calm farms deep in the countryside, peaceful but alive with the sun, birds and bees!
