Brewed with Scottish malted barley, raw wheat and rolled oats. This golden base beer was fermented with a Brettanomyces strain isolated from a renowned Belgian Trappist brewery. A new strain for us, we are enjoying its stone fruit characteristics, crisp light body and subtle but growing funk, which make for a very crushable beer.
We lightly dry-hopped this beer with Mosaic and Galaxy hop terpenes (isolated aromatic hop compounds), adding subtle nuance to the aroma. May this seabeast return any ring you may inadvertently drop into a lake.
All ingredients (except the hops) were harvested within 33 miles of the brewery.

Very pale and clear straw coloured hue with lovely carbonation. Light and fresh aromas of stone fruit thanks for their beast of a yeast! You also pick up on the wheat and tropical notes from the dry hop.
I'm not a fan of splitting the hops into components but in this case with a sour it's fine as the hops are a bonus.
Nice a sharp first sip yet not overly sour. It's light and very lively in the mouth with low body and a short dry finish. It's refreshingly drinkable, gulpable even. Pink grapefruit, apricot, lemon and peach blend of flavours. An amalgamation of sharp fruits; citrus and stone with funk.
This was released back in February of this year so it's been in bottle for upto 8 months. How much funky flavours have been generated in this time I'm not sure as I haven't had one young, but it exists somewhere in the yeast and within its wheat, enhancing the stone fruit vibes.
Fruity and light, approachable sour.
