6.2% Sour IPA / Wild IPA
Golden Sour with Sicilian Oranges and Lemons Primary fermented with our ‘Goat Wizard’ Brettanomyces blend, and brewed with local Scottish barley, wheat and oats. We aged Summer Crusher for 3 months in stainless steel before adding over 80kg of oranges and lemons (70/30) which were zested, pulped and juiced by hand. We sourced the highest quality citrus fruits, directly from the growers Bio Agrumi Monasteri, who specialise in organic and sustainable cultivation practices. We macerated the beer on the citrus fruit for an additional month during the beers extended conditioning time. Drink young, or age. This will get weirder. Hail the Goat! Artwork by Jimbob Isaac

Sharp citrusy and with a well balanced sourness to finish

Pale gold with a slight haze and very visible carbonation leading to a persistent minimal head. Bright and inviting aromas of sharp citrus, most notably lemon, with yeast and barley blending with the orange. First sip doesn't hit you with sourness off the bat but rather stays on a level and continues till the end. It is nice and sharp and very fresh tasting with the Sicilian lemons that dominate the show. Again, the orange seems to blend in with the yeast, wheat and barley but it is there giving a slight depth. It is very sharp, and as a big of sharp citrus, I like it! The finish is long with sharp citrus flavour staying with you for minutes but the finish also is pleasantly wheaty. Any golden sour is pretty farmhouse-like, but the use of high quality lemons and oranges take this elsewhere, without them this brew would have a short wheat finish. You want to keep going back for another sip, or gulp even, despite being so sharp. Proper sour without expansive fruit, there's no tropicals, no red fruits or Berry's..just sharp sour lemony goodness with orange and the main building blocks all working together to create a simple yet refined brew.
