6.5% Saison / Farmhouse Ale
Mixed fermentation Saison. Fermented with a mixed culture of classic saison strains, wild yeast, & bacteria. Post fermentation, the beer was conditioned in stainless steel for 6 weeks with its primary mixed culture. A third & final fermentation completed this beer in the bottle. Pockets of Sunlight is a radiant saison full of crisp energy.

Ghost Whale 2019 Advent Calendar #16 Bottled and brewed 2018. I have kept this beer in my cellar over three years. Aroma: Tartness, stables and leather. Mouthfeel: medium carbonation, dry, balanced, juicy and elegant. I can taste apple, leather, honey, lemon, tart and stable. Aftertaste is dry, smooth and tasty. Very nice indeed 👌

Another new brewery for me. As it was a theme in my last purchase from Beer Republic. I'm very interested about Jackie O's beers and especially in these mixed fermentation beers as they are to me as a homebrewer, one of the most fascinating beers. Bottle. Bottled on: somewhere in 2018 Temperature: +10,5 Straw-yellow, very good clarity. Soapy, fizzing head with average life: 3,25/5 Nose has soft funky aromas of barnyard, apple and zesty fruitiness with a hint of leather. Mild sour nuance takes lemon-like aroma especially when this warms up a bit. Mild spicy aroma also pushes through when this is warmer. Honey sweetness complements all of this nicely. Good: 4,25/5 Mouthfeel is light, sour, seems like this has lost some freshness (bottled somewhere in 2018). Medium-high carbonation and tart feel stick to the mouth: 3,75/5 Taste is fruity tart, sour, funky, lemony... I was anticipating more funkiness but it is rather restrained. Plus there are not really many Saison-like flavors other than maybe the tart fruitiness but that most likely comes as much from the Brett/Lacto as from the Saison yeast. In the end, there's again that honey sweetness. I love it how it comes to play in the very end, giving more complexity to this one. Aftertaste is medium-dry, not very tart or sour: 11,5/15 Interesting, flavorful beer. Bright flavors with everything put in here shining. I was hoping for something more but really good beer as the way it is. Pouring the sediment into the glass makes this more sour rather than funky: 16,25/20 =39/50

Aivan loistavan raikas olut yhtään mausta tinkimättä. + toinen kokeilu pullosta 2021, brewed and bottled in 2017. Erinomaisen mausteinen ja sitruksinen mutta tasapainoisesti. Saisoniksi tosi moniulotteinen. Hyvät kuplat ja hapot.

Fresh and crisp well balanced Saison. Fizzy mouth feel. Brewed with honey, coriander and lemon verbena. Nice lemon and rhubarb tartness. Light honey smoothness and hint coriander. Also maybe some white pepper.
