I made this Cyser earlier in the year and it has been under the bed for 9 months. You should technically wait at least a year to drink mead but it's New Year's Eve and I couldn't wait any longer. I basically turned a 6.5% cider into an 11% mead 😊 The aroma has both honey wine and cider. It's warming and sweet, with an ever-so-slightly dry finish, almost like a sherry. It initially tastes of honey but then the apple flavour shines through. For my first attempt at making a cyser, this is very good. I have since had some pointers from a professional mead maker so it should only get better from here 🙂
