Our trademark coffee porter is infused with our own special roasted organic fair-trade coffee from Conscious Coffees in Boulder. In order to get the right balance of flavor, we introduce the coffee to the finished beer as we transfer it to the conditioning tank in the cooler. The day before we transfer the fermented beer, we steep the coarsely ground coffee in a five gallon bucket of cold water; thus creating a "cold toddy". Once the grounds have steeped overnight, we strain them and add the potent coffee brew to the serving tank before we fill it with the porter. The resultant brew is considerably caffeinated. Don't drink it too late at night; you might end up watching the sunrise!
