We love our new world hops, so of course we dry hopped with more than 3 lbs per barrel of Mosaic, Galaxy, and Citra for this prototypical west coast IPA. For the malt bill we stuck to our go to of 2-row, vienna, and carapils, but added a bit of acid malt to give the neon a touch of acidity. What we ended up with is a bright, juicy west coast IPA that stays focused on the hops and balances dank, greener notes with the citrus and fruit driven leanings of new wave hops.
