Modeled after a Belgian Saison, but fermented with 100% Brettanomyces yeast, Alicornicopia is light bodied with a pale yellow color.   Delicate fruity yeast esters lead into some earthy and light lemony flavors, notably brought on by the contribution of the Brett.  The finish is clean with little hop bitterness and a crisp effervescence.
