Todd's a quality technician. Todd made a beer. It's a Belgian-Style Quadrupel. It's really hard to make, but it's totally worth it for the big malty flavor, the touch of sweetness, dried fruit notes, and the deep red-brown color you get to look at while you're drinking it. So don't worry about any of the technical details, Todd's got that covered.
On it's own, Todd makes an excellent digestif, but Todd, the man, isn't really about that. Try Todd alongside a spicy, three-bean vegan chili or use Todd in a Carbonade a la Flemande and serve over roasted new potatoes. Washed-rind cheeses, such as soft, spreadable Epoisses de Bourgogne or Taleggio, or a good sized chunk of Gruyère will also go nicely with Todd.
