Another brewery in this industrial zone of Lisbon. Interesting beers on tap here! This is obviously my first Koji / Ginjo Beer. Normally, they are brewed with sake yeast or enzymes. This particular sample contains rice. Sounds interesting! Translucent gold is the appearance. A restrained, pure white head with a silky texture and height of one finger. A very fruity and floral scent: yuzu, mandarin, orange pulp, a bit of meadow flowers, cereal and impotent biscuit. A tad sugary? Pretty much the same package on the tongue, too. This is supposed to contain wasabi, as well, but I can only imagine it in the air, not on the tongue. The sensation is light, floral, juicy and refreshing. Quite an innovation, I must say.
