12.4% Imperial Stout
Our friends over at Kentucky’s own Willett Distillery have one kind of barrel: wood. And they put two things in them: Bourbon and Rye. We were fortunate enough to get some of their Bourbon barrels, and we put a special coffee-fied version of our Imperial Stout in them.
100% Barrel-Aged, 0% Stainless. Brewed using every Highly-roasted malt we could get our hands on and coffee from our buds at Chicago’s-own Metropolis coffee. Aged in Bourbon & Rye barrels from our friends at Willett Distillery.
A chocolatey, coffee-y, smoky, Bourbon-y beast of a barrel-aged thing. Word.

Bottled in 2023
Coffee, rye spiciness, and bourbon in the aroma. Taste has bourbon and rye spiciness first, with the coffee coming in towards the end of the mid-palate and continuing into the finish. The aftertaste is primarily coffee.
The body is medium-full with a low-ish amount of carbonation.
This one definitely tastes fresh, despite being just over a year old, but that's not necessarily a bad thing. This is the third, and I believe final, appearance of Willettized in this year's advent calendar, and I think as a coffee stout, this one is my favorite. The 2017 from last night, however, was definitely a delightful experience. I can't wait to try this year's.
For being a 12.4% abv beer, the drinkability is great, and the booze level is not crazy. This is one of the best bangs for your buck, in terms of price for the quality and strength. I look forward to this one yearly. 4.5/5
