This was an unusual and deceptive beer. It’s a saison yet the added honey really shines through giving a gentle sweetness and some body, and the ageing process has completely transformed the beer. There’s caramel and vanilla in small quantities, there’s a dry woodiness too. The vinous notes eventually come through but not as dominant as I expected. It’s highly complex but very drinkable. For all it has going it’s smooth and slips down too easy.
