Phantasma is a collab with our dear friends from FreeStyle Hops and thanks to them we've been able to try out a range of new products and techniques. The logic behind this beer was to make available as many thiol precursors as possible so that a suitable yeast could convert them and release the aromatic compounds associated. We did mash hopping with Motueka, used Super Sauvin (blend of Nelson Sauvin and Phantasm™) in the whirlpool and in biotransformation and used a strain of yeast capable of converting thiol precursors.
