Tiara of Skins is a collaboration with Finnish urban winery Noita Winery, also located in Fiskars Village. Using our wild Stock Pale fermented in a foeder, blended with fresh from foeder beer and 1- and 2- years barrel aged Stock Pale, we did a second fermentation and conditioning on Grüner Veltliner grapes. Into a foeder we added both fresh, hand destemmed organic Austrian grapes and grape pomace straight from wine production, topping the foeder up with a blend of said wild beer. The beer carries typical notes of both wild beer and Gruner Veltliner grapes, resulting in a vibrant combo of acidity and funk, with notes of grapefruit, white pepper and green apple.
