An interesting beer. Literally a 50/50 saison and wild spontaneous ale, taking the best of both beer styles and leaving the stuff I don’t like, out.
Tart and refreshing. Spicy aromas with elderflower. Flavours of white grape, elderflower and spice. Slightly dry vinous finish.
Knowing the characteristics of a wild ale are there without overpowering is quite satisfying. I like the complexity of spontaneously fermented beers but don’t like the harsh tartness. This is tempered and easy to enjoy
