Pale wheat beer spontaneously fermented and aged for 9 months in a single 400 litre French oak barrel. A portion of the beer was moved onto Montepulciano grape pomace(stems, seeds and skins) and Pond’s Seedling plum stones. It refermented on fruit in a 225 litre french oak barrel for 6 weeks. The pomace was given to us by a wine-making friend and the stones from our own plums. Packaged with a small amount of priming sugar for natural carbonation in the bottle. Bottles laid to rest on side. We condition our bottles for a minimum of 3 months.
Ingredients: Malted barley(pilsner), Malted wheat, Raw wheat, Fuggles(whole leaf, 2014), Strisselspalt(whole leaf, 2015), Montepulciano grape pomace, Pond’s seedling plum stones, Water.
