Now Sahti!! Sahti is nowadays an integral part of my midsummer festivities. Homebrewed as usual. This Sahti is a blend of six malts, in addition to one malt, Sahti Malt, being itself a blend. Red Active is a malt that we've never tried before, all the others have featured in our Sahtis, either as a single additional component or together with another extra malt. Therefore, our normal concoction contains Sahti Malt and rye malt plus one more malt ingredient or two, that totals three or four malts. Now six. Not sure what the outcome is but soon I will find out. The appearance is truly dark brown. Like black coffee. No light is allowed to pass through. Opaque. Some moderate carbonation is observable, maybe the Sahti was growlered when still fermenting despite the cold crash. Fawn big bubbles emerge on the top and die immediately away. Dark roasted aromas and rye show their folklore moves first. Caramel and brownie join the line dance right thereafter. Relatively mellow nuances, not immensely sweet but not bleedingly dry either. The tongue sips carefully. The immediate impression is sweet. Sweeter than I anticipate on the basis of the fragrance but that's only good! Brownie, dark chocolate and raw cacao powder leave their engrams in my sense of taste. Clove is easily identifiable. Injections of brown sugar and syrup seal the deal neatly. Works beautifully like the balmy atmosphere in this midsummer. The body has often been a challenge in our brews. So is it now, too. It's maximum medium-full. Some competition Sahtis that I've tasted in the annual Sahti championships have had massively thick kissel-like bodies. We are still in the process toward such a body. The finish is caramelly, dark chocolatey and distantly syrupy, actually very similar to the earlier gustatory experience. The mouthfeel is medium-full, lip-glueing, modestly sticky, flat like it's supposed to be. It's relatively intense flavorwise, probably because of rye and dark malt, as well as remotely roasty. I can foresee that the whole container will be finished fast.
