29/04/2022 | For this Speling van het Lot, we blended a Mirabelle lambik with a large part three-year-old lambik that matured on a fine Amontillado barrel. In total, we used lambikken from four different barrels and originating from five brews. More than 70% of the lambikken used were older than 36 months. Plus, we macerated the plums for almost eight months, rendering the weighted average age of this particular blend to more than 35 months. The final fruit intensity is 250 grams of plums per litre, balancing the refined aromas and flavours of the Amontillado barrel. 100% 3 Fonteinen.
