Blend of the most special 1 year, 2 year and 3 year-old barrels from our cellar, inspired by our favorite spontaneous Belgian beers, where the younger beer provides freshness and brightness whereas the old beer brings the complexity of wood and fermentation to the table. Long, yet rounded acidity plays with vanilla and tobacco notes from the wood, and funky, smoky Brettanomyces character takes us for a brisk walk around the barnyard.
