We were approached by Anders and Christian from Akkurat to make a similar beer to Cuvee de Ranke but with a fruit element. We met with Anders and tasted a bunch of barrels and tanks.
We settled on a very complex, multi-blend of mostly spontaneous beers as follows - please excuse the nerdery!!
The blend
50% second use of sour cherries blended with 50% coolship saison and 50% big Foeder sour
20% second use of raspberries blended with coolship saison, 2019 Saison de Bättre barrel and big Foder Sour
30% coolship spontaneous sour ale barrels with added smaller Foeder sour.
Definitely the most complex blending we have ever done
The resulting beer is as we hoped: sour, funky and fruity.
