Pale straw hue with visible carbonation after the pour. Fresh on the nose with pineapple, orange blossom, yuzu, white grape and elderflower, very nice. Light and carbonated mouthfeel with light to medium body. It's soft and easy drinking yet a fair amount of hefty Galaxy hop flavour. It's not complex and it's not particularly rich for a double dry hop but in a good way, making it gulpable and pleasing enough. You find the same flavours on the tongue like you do in aroma on the nose but in a less obvious manner. Tender orange blossom, bit of spiky pineapple, a suggestion of yuzu minus the acidity obviously, and grapefruit and elderflower on the finish. This is a single hop brew. Galaxy could be Mosaic's softer cousin, less spike and an array of delicate flavours underneath. The finish is quick with a small amount of lingering dank hops on the tongue. More pleasant to drink than my last beer the other day of Enigma & Mosaic, though I'm pretty sure I've had an amazing "Saturated in Mosaic" by Deya before. Pairing Galaxy and Mosaic could be good or it could be a mistake as the spikeyness could overwhelm, I'll have to look out for one, but this single hop DDH is nice anyway. Hoppy, soft and juicy with some delicate sophistication and subtle complexity.
