This Aardbei has shortly macerated on a stainless steel tank and then matured on a foeder for another two months. We used strawberries from Ferme Framboos that were hand-picked in the summer of 2020.
We used a single jonge lambik, and we did not blend with any other lambik afterwards. The final fruit intensity amounts up to 623 grams of strawberries per litre of Aardbei.

Lambic time! 😋🍷
This is my first strawberry Lambic. Looking forward to it with great interest. Season 2020|21. Vintage 2021. Best before 26 Oct 2041. I wonder if it's that accurate though... 😄
The beer colors very deep orange with a faint red tint. Carbonation is oppressed as a half-a-finger, yellow, airy head forms on the surface and descends quickly to a neat dense lace ring.
The scent puts forward sour apple, a bit of green grape, quite distinct rowanberry and a leathery note. Wheat malt foundation is robust. Wild yeast gives me a funky time.
The taste receptors enjoy dry white wine, extraordinarily sour apple and a good amount of rowanberry. Strawberry is difficult to spot as it's very sour and suppressed. However, the strawberry intensity in maceration has been abundant, but still, the final flavor intensity remains moderate. It clearly reflects how difficult strawberry is in brewing. Wheat malt supports at the bottom while the wild yeast tries to hammer more edges.
The body is light-medium to medium. Good job for 5.7 %. The finish smashes even more white wine and sour apple for the taste receptors to digest than before. Strawberry is certainly sour and vinous but detectable. The aftertaste knows that nothing is real and nothing to get hung about strawberry fields forever.
The mouthfeel is vinous, tart, puckering, funky and Belgiany. It's also acidic, dry and drying, even astringent. Nice package with challenging ingredient. I appreciate the effort! 💗💗
