For this, our third barrel aged edition, we wanted to try something slightly different. Our regular Philly cherry sour is a delicious pale ale brewed with Scottish pale malt, malted oats and wheat. The addition of a metric shedload of sour morello cherries marries perfectly with the fruity, peachy esters created by the Philly yeast. We boosted the abv of a batch with extra malt, then matured it in freshly disgorged Tempranillo barrels for over nine months. The result builds on the original by bringing smooth, sophisticated, oaky vanillins and tannic dryness from the residual red wine.
