Thiology 101 // Collab w/ @alvaradostreetbeer - A Thiol Driven DDH DIPA w/ Phantasm, Nelson Sauvin, Riwawka, & Citra, 8.8% abv
We were the students for this collab, with our pal JC from Alvarado Street teaching the class, Thiology 101. Thiols are super aromatic compounds found in hops, and in this case, NZ Sauv Blanc skins too. Thiols are insane, as we are so sensitive to the super small amount that exists in beer, that they need to be measured in the parts per trillion! As Professor JC taught us, by using a specific yeast strain, it'll free up more of the fruity Thiols from the hops/grape skinslift them to right to our noses! So anyway, here's this insanely juicy and tropical release that his with flavors/aromas of: Cotton Candy grapes, cherry Jolly Rancher, Pineapple Aqua Fresca, and lots of NZ Sauv Blanc.

AROMA: It’s like white wine cotton candy! Absolutely. Dryish, white grapey, somewhat sugar caney and soft. Fun!
HEAD: Solid two finger tall. Lasts nicely and creates mouthwatering lacing.

Indeed yes. I get that familiar Sauvignon Blanc beautifully! Also white grape peels are there as are small injection from gooseberries too. Grovy, leafy being is steady as the earthiness too. It’s gorgeous stuff. Some lemons and pineapples with cantaloupe dancing there too.
Mouthfeel is soft and bit over medium leveled. It’s really smooth. Dry hops gives just the tiniest little pinch into the cheeks so you can detect their being. Carbonation is funny; bit sandy dry, large in volume, but nevertheless mellow and blends perfectly to the taste.

Thiols = Super Aromatic Compounds In Hops.
Now there’s a damn beautiful brew! Well balanced with a gorgeously clear and profound tasteprofile. It has strong feel of precision to it with everything. All that I’m missing is that higher volume of being (=TIPA version).
