One more À Tue-Tête! I saved this one last because I think it's the most interesting one. We'll see. The beer displays a turbid, dark garnet hue. Shy carbonation pulls up a soft white head that has basically no bubbles at all, just dense moussy texture. The foam expands one finger thick and descends gradually and kisses the rim tightly. Sour plum settles down timidly on a wheaty bed. Very straightforward and plain, I can't get anything else than that. The taste identity includes loads of sour damson and a reasonable injection of wheat malt. Accompaniments include sour plum, a whisper of purple gooseberry and a silent sigh of blackberry. The surprising characteristic is that the name suggests plum, which is normally sweeter, but I actually find astringent damson in the gustatory profile. Otherwise, the flavors of plum and damson are, of course, very close to each other. The body ranges between light and light-medium. The finish lifts the wheat up a little and enters yeast. Astringency continues, even intensifies moderately. Like chewing damson skin. The aftertaste can't help grinding its teeth until they lose all the dental enamel. The mouthfeel is somewhat light, quite tart, puckering, astringent, relatively acidic and dry. It's also drying but not as much as I anticipated. Maybe distant funkiness can also be observed. Doesn't quite beat "Pêche Abricot 2020" due to its layeredness but still ranks high in the Fruited Sour Ale universe. My 150th 🇨🇭.
