Submersible pump working for a while, I can only wait and have a beer. What a superb excuse! This is one of our second set of homebrewed Sour Ales. Flavored with loads of self-picked wild raspberries from the last summer and kept in freezer until brewing. We seasoned the beer with a decent amount of organic raw licorice powder. This is actually our first all-grain beer without using the second runnings of the Sahti wort. This should be basically ready for consumption now. It seems, however, that carbonation is still somewhat low. A meager, off-white head emerges on the surface and melts hastily away. Otherwise, the beer looks attractive, deep crimson and fully impenetrable. The scent lets loose a good punch of fresh raspberry mash, not sweet but not overwhelmingly sour either. Very natural. Licorice powder is quite sweet. Attractive cocktail! ❤️❤️ The taste profile is nicely sour. I don't remember exactly how much the pH was, it could have been 3.8 but probably rose a tad when we added the raspberries and licorice powder. And indeed: powerful raspberry rolls with surprisingly hefty raw licorice powder. Passionfruit is detectable, as well, it must originate from the fruit juice we used for bringing the pH down. The wheaty backbone supports the palette but doesn't confuse the gardeny experience. The body is light but by no means thin. The finish changes so that passionfruit intensifies while raspberry still remains quite brave. Licorice may lose its position but doesn't certainly disappear. The aftertaste throws raspberry licorice drops in the air and captures them in its mouth quickly. The mouthfeel is neatly tart and slightly puckering. It's also light, rich in berries, natural and very gardeny. Even candy-like. Nevertheless, first and foremost, this is extraordinarily crushable! A perfect summer drink, especially when carbonation is a bit more prominent. ❤️❤️❤️
