For this beer we tried something completely new, we used Danish raw unmalted wheat as a big percentage of the grain bill. A technique mostly associated with spontaneous beer production. This added a ton of body and mouthfeel, along with the malted oats. We then dry-hopped it with Wai-iti and Calypso, both of which we have never worked with before. The result is a big but hugely drinkable beer that we are very proud of.
