Sour Barrel Aged Oud Bruin This tart Oud Bruin-style ale spent over one year aging in red wine barrels while mingling with an exceptionally diverse mix of sour/funky cultures. The resulting beer is loaded with dark fruit, malty complexity, and a noticeable oak presence, lending Empty Hats an exceptionally long, lingering finish. Fermentation began with Modern Times house Lomaland yeast culture, but the robust sourness is a result of a secondary mixed fermentation of Lactobacillus and Pediococcus.
